Onion Personally, I prefer to use yellow onion to get the best flavor. However, white or red will be good too.
OilFor cooking. High-temperature oil, such as olive oil, canola, or vegetables, is suitable.
HOW TO COOK LIVER AND ONIONS
In a large pan, cook two tablespoons of oil at a moderate temperature. In the skillet, add the onions that have been thinly cut. Sprinkle them with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Cook, stirring regularly, until the onions are cooked through and caramelized in about 15 minutes. Then, remove the cooked onions and place them on a serving plate or plates for individual servings.
Within the skillet, cook another one teaspoon of oil at a moderately high temperature. Then, sprinkle the livers of the chicken by adding the rest 1/4 teaspoon salt and 1/8 teaspoon of pepper.
If needed, put the livers into the pan in two batches and cook for 2 minutes on each side. Then turn the pan and cook until the livers are browned, around 2 minutes more. The livers must remain pink inside. Take the livers of the chicken out of the pan and place them on top of the onions.

HOW TO PREPARE CHICKEN LIVERS
Make sure you trim your livers free of sinew and fat. To avoid the bitter taste, the livers should be soaked in milk or water for at least three hours before cooking. Pat dry them before proceeding in the cooking process. This can help reduce the taste and soften them in texture.

Cook, stirring regularly, until the onions are cooked through and caramelized in about 15 minutes. Then, remove the cooked onions and place them on a serving or individual plate.
Within the skillet, cook another teaspoon of oil on moderately high heat. Then, sprinkle the livers of the chicken using the remainder of 1 teaspoon salt and 1/8 teaspoon of pepper.
Put the livers into the pan in two batches if required, and cook for two minutes on each side. Then, turn the pan and cook until golden brown, which should take about 2 minutes more. The livers should have a pink interior. Take the livers of the chicken out of the pan and place them on top of the onion.
