This easy Date Loaf recipe is budget-friendly, and you probably already have all the ingredients in your fridge and pantry. If you like, you can use fresh Medjool Dates in this recipe. Just make sure to remove the seeds first!

You can use this loaf to make a tasty treat for your lunchboxes or enjoy it slathered in butter and served with morning tea.

Tips for making my Nan’s Easy Date Loaf:

Store this Date Loaf in an airtight container at room temperature. This date loaf can be stored for up to five days.

Wrap it in foil and place it into a freezer-safe container.

This recipe can be made with Medjool dates, but you’ll need to remove the seeds and slice them in half before you chop them.

You can use a piece of foil to cover the top of the loaf if you’re worried it is browning excessively.

One cup of chopped pitted dates is 200 grams.

If using a Thermomix, 1 cup of boiling water is 250 grams of warm water.

Sixty grams of butter cubed.

One cup brown sugar 180 g.

Two teaspoons of vanilla extract.

1 & 3/4 cups self-raising flour 260 grams.

1 tsp of bicarbonate soda.

Instructions

Preheat your oven to 180 degrees Celsius. Line a loaf pan with baking paper.

Place your dates in a large bowl after you have chopped them roughly.

Pour the boiling water over the sugar and butter. Gently mix until the butter is melted.

Mix the self-raising flour, vanilla extract, and bicarbonate soda until well combined.

Pour the mixture into the loaf pan and smooth out the top. Bake for 35-40 minutes until the skewer inserted into the center comes clean.

Allow the Date Loaf in the tin to cool for 15 minutes, then carefully remove it and cool to room temperature.

Thermomix instructions

Preheat your oven to 180 degrees Celsius. Line a loaf pan with baking paper.

To roughly chop the dates, place them in your Thermomix and mix on speed 7 for 4 seconds. If you want your dates finer, continue mixing for three more seconds at speed 7.

Add the brown sugar, butter, and water (you can also use hot tap water) and cook at 70 degrees for 4 minutes.

Add the self-raising flour, vanilla extract, and bicarbonate soda. Mix for 12 secs, speed 5.

Scrub the sides of Thermomix and continue mixing for five more seconds at speed 4.

Pour the mixture into the loaf pan and smooth out the top. Bake for 35-40 minutes or until the skewer comes clean after being inserted into the center.

Allow the Date Loaf in the tin to cool for 15 minutes, then carefully remove it and cool it to room temperature.
