I don’t know about you, but I love broccoli A LOT! I have a four-year child who is also obsessed with broccoli. She is eating it fresh and straight with no cheese or butter.

Talking about… We had cheese in this cauliflower broccoli bake but didn’t have butter.

Why do you need butter when you have Star’s Signature Series Garlic Flavored Olive Oil?

This bottle blends the finest varieties of extra-virgin olive oils and the smoky taste of roasted garlic. Adding a kick of garlic to dishes you love, such as the Garlicky and Cheesy Cauliflower Broccoli Bake is ideal.

Let me be transparent regarding this dish.

My dear readers will happen when the food writer finally discovers her missing SD card? You get recipes for side dishes intended to be shared around Thanksgiving. It’s only three months after the fact.

I’m unable to tell you how much mess I created in my home while trying to locate that card. When I decided to give up, it was UP! Just in front of me in front of the cake stand, in a cupboard. So random.

While this savory vegetable bake is a great option for any Holiday dinner table, it’s perfect for the evening of a Monday.

We will steam the vegetables for a short time and then allow them to rest for some time to simmer with Star’s garlic Flavored Olive Oil, onions, and garlic.

As we go along, we’ll make a cheese sauce made up of a combination of evaporated milk and shredded cheddar, and cornstarch. It’s a straightforward cheese sauce I discovered in an old Weight Watchers cookbook many years ago. I’ve used it ever since for a myriad of dishes.

The most important thing to remember while making your sauce is that you cook it at a low temperature. If you crank up the heat, the sauce may appear grainy, mainly when using low-fat cheeses.

When the cheese and vegetables are incorporated, we’ll put hem them in the oven for about 20 minutes or until the sauce is bubbling.

Warm, rich, and creamy cauliflower broccoli bake. Is it healthy? I can say one thing for sure that it is incredibly satisfying.

Star Garlic Flavored Olive Oil by Ferran Adria is available only at certain Safeway and Vons stores.

1 cup of reduced-fat cheddar cheese divided.

One teaspoon of cornstarch.

One bottle (12 ounces) of evaporated milk without fat.

1/2 teaspoon Dijon mustard.

1/4 teaspoon smoked paprika or as desired.

1/4 cup low-fat part-skim shredded mozzarella cheese.

Set the oven temperature to 400F. Sprinkle a bit of olive oil onto a baking dish square, spread it over, and put it aside.

In a large pan, prepare 1 inch of salted water at the point of boiling. Add the cauliflower and broccoli to the skillet; cover and cook on high heat until tender and crisp, around 4 minutes. Rinse the vegetables in a colander, and then set aside.

Cleanse the skillet. Add two tablespoons of olive oil, and turn the heat to medium-high. Add onions, and allow to cook for 3 mins or until soft.

Mix in minced garlic, then continue stirring and cooking for one minute. Add the cauliflower and broccoli to the pan. Sprinkle with salt and pepper. Continue to cook for 2 minutes or until the vegetables are lightly golden.

Remove the pan from the heating and add the veggies to an oven dish previously prepared. Set aside.

Clean the skillet and include one tablespoon of olive oil and 3/4 cup of shredded cheddar cheese, corn starch, evaporated milk, mustard, salt, pepper, and spice paprika.

Cook on low heat and stirring continuously using a whisk until the mixture is melted and thickened, approximately 2 minutes.

Pour the cheese sauce over the broccoli and cauliflower. Stir to mix. Sprinkle the remaining cheeses on top.

Cook for about 20 mins or until lightly golden and bubbly. Remove from the oven and serve right away.
