As we go along, we’ll make a cheese sauce made up of a combination of evaporated milk and shredded cheddar, and cornstarch. It’s a straightforward cheese sauce I discovered in an old Weight Watchers cookbook many years ago. I’ve used it ever since for a myriad of dishes.
The most important thing to remember while making your sauce is that you cook it at a low temperature. If you crank up the heat, the sauce may appear grainy, mainly when using low-fat cheeses.
When the cheese and vegetables are incorporated, we’ll put hem them in the oven for about 20 minutes or until the sauce is bubbling.

FOR THE CHEESE SAUCE
1 cup of reduced-fat cheddar cheese divided.
One teaspoon of cornstarch.
One bottle (12 ounces) of evaporated milk without fat.
1/2 teaspoon Dijon mustard.
1/4 teaspoon smoked paprika or as desired.
1/4 cup low-fat part-skim shredded mozzarella cheese.
INSTRUCTIONS
Set the oven temperature to 400F. Sprinkle a bit of olive oil onto a baking dish square, spread it over, and put it aside.
In a large pan, prepare 1 inch of salted water at the point of boiling. Add the cauliflower and broccoli to the skillet; cover and cook on high heat until tender and crisp, around 4 minutes. Rinse the vegetables in a colander, and then set aside.
Cleanse the skillet. Add two tablespoons of olive oil, and turn the heat to medium-high. Add onions, and allow to cook for 3 mins or until soft.
Mix in minced garlic, then continue stirring and cooking for one minute. Add the cauliflower and broccoli to the pan. Sprinkle with salt and pepper. Continue to cook for 2 minutes or until the vegetables are lightly golden.
Remove the pan from the heating and add the veggies to an oven dish previously prepared. Set aside.
Clean the skillet and include one tablespoon of olive oil and 3/4 cup of shredded cheddar cheese, corn starch, evaporated milk, mustard, salt, pepper, and spice paprika.
Cook on low heat and stirring continuously using a whisk until the mixture is melted and thickened, approximately 2 minutes.
Pour the cheese sauce over the broccoli and cauliflower. Stir to mix. Sprinkle the remaining cheeses on top.
Cook for about 20 mins or until lightly golden and bubbly. Remove from the oven and serve right away.
